Cashew Milk Recipe
I started making cashew milk at home years ago when I tried being vegan / paleo. It's a very basic recipe that I have tweaked over the years but is quick and comforting. I like drinking it hot, sometimes with coffee or even a little chocolate mixed in.
Why is this on my data blog? No good reason, honestly. However, I have been trying to time myself making this recipe and was able to go through all the prep and cleanup in just about 8 minutes. Let me know how long it takes you to make it so I can get more data!
Homemade Cashew Milk
Ingredients:
1 cup unsalted, unroasted cashews (some folks soak them overnight, but I don't think it's necessary)
4 cups water (split into two 2-cup containers)
6 dates (without pits)
2 teaspoons vanilla extract
Process:
Using a powerful blender (I use a Vitamix), add the cashews, 2 cups of water, dates, and vanilla to the blender.
Blend on high for about a minute or until the contents turn into a smooth consistency.
Add the next two cups of water and blend again for a minute or so. I use hot boiled water for this step so the resulting milk is hot, but cold water will work just as well.
